Homemade Christmas Gifting day five – Rum and raisin fudge recipe

Indulge with Rum and Raisin Fudge on Day 5 . . . Rum and Raisin fudge is a classic favourite for many, making this the perfect personal gift for rum and raisin enthusiasts. The recipe takes only a small twist on classic plain fudge, making it quick and easy to make – perfect to beat that Christmas rush!

MAKES TWO GIFTS

 

Ingredients

100g raisins
40ml dark rum
300g soft brown sugar
300ml evaporated milk
75g butter

 

Method

 

1. Place the raisins in a bowl and cover with the rum. Leave to soak for 2 hours (or overnight for fat juicy raisins!)

 

2. Grease a 20cm square tray and line with foil.

 

3. Add the sugar and evaporated milk to a pan.

 

4. Slowly melt the sugar, stirring gently with a tablespoon. It is ready when the grains of sugar no longer appear on the back of the spoon. This can take up to 10 minutes – your fudge will be smoother if you melt the sugar slowly.

 

5. When the sugar has melted, bring the mixture to the boil slowly. When the mixture is bubbling (on the lowest possible heat), put the lid on and leave it to boil for 3 minutes.

 

6. Remove the lid and place your thermometer into the mix. Gradually increase the temperature (over 10 minutes or so) until you reach 116°C (240.8°F). Remove the pan from the heat.

 

7. Remove from the heat and add the butter. Stir in the rum and raisins until fully incorporated.

 

8. Pour into the tray and leave to cool before refrigerating for 4 hours. Chop into 2½cm cubes.

 

9. Store in an airtight container in a cool, dark place. It should keep for about 10–12 days.
